From The Frozen Lake: White Fish

Like the recent videos of the Perennial Plate folks Kevin Kossowan’s works has gotten even more beautiful.  This video takes us from his ice fishing hut to his kitchen where he prepares his freshly caught white fish two ways: Pan seared and pickled.

It’s funny to hear him speak about how he only became aware of White Fish a few years back, Kevin needs to spend more time in New York where smoked White Fish salad on a bagel has to be one of the best things on the planet.

I’m not sure you can get really fresh White Fish here, but I’m going to start looking for it because this video has made me really want to pickle some.

I love my neighborhood (the Lower East Side of Manhattan) and I love to travel. Because NYC is such a big place I tend to focus mostly on my 'hood and the ones that are close by: The East Village, Bowery, Chinatown and Williamsburg. My love of travel has no limits really, I'm always ready to get on a plane. I was lucky enough to have a business for many years that allowed me to spend a lot of time in South East Asia. These days I've been spending time in Mexico, Germany, Canada and the West Coast of the U.S., but check back you never know where I might end up.     ah/// whitefish! here in nyc it means yummy smoked fish salad on toasted bagels, but for this midwestern girl whiteish is what my mom baked many friday nights for dinner. Fresh, and stuiffed with parsley and tomato, as i recall. very tasty.
