Over the years I have pickled it, made upsidedown cakes with it and of course made lots of crumbles with it. This year it took me by surprise. Everything is so early. I don’t have my pickling mojo on just yet, but the first thing I think about when I see Rhubarb is: Crumble. Maybe with some home made vanilla ice cream?
