Cherry Tomato Pizza

Cherry tomatoes were on sale: 2  pints for $5 at the market, so I snatched them up and brought them home and fried them up with lots of garlic and olive oil and spread them on my pizza dough which makes 2 pizzas.

Pizza Dough

In the bowl of a standing mixer fitted with the paddle attachment add: 3 3/4 cups bread flour, 2 teaspoons salt, 1 Teaspoon Sugar and 2 Teaspoon yeast turn the mixer to medium and add 1 1/2 cups warm water mix until the dough starts to form a ball. It should be sticky if not add a little more water.  Sprinkle with olive oil and work with your hands until it forms a uniform ball.  Place back into the now well oiled bowl and cover with plastic (I use recycled bags) and a tea towel.

Let rise until doubled, about 2 hours.

Top as you want for this cherry tomato version I added a generous amount of freshly grated Parmesan and lots of fresh mozzarella.  Cooked it in a hot 500F oven till browned and bubbly!
